Farm-fresh garlic cloves, peeled by hand and pickled until they turn tender, mellow and deeply aromatic in warm mustard-oil spices.
Raw garlic is harsh; pickled garlic is not. Weeks in salt and oil take the bite out and leave something rounder and almost sweet. The cloves stay whole and soften to the point where they give under a spoon.
Peeling enough garlic for a batch by hand is the slowest job in the kitchen.
What to eat it with
Dal, rice, or straight from the jar. Good with anything plain and hot.

Keep the jar in a cool, dark cupboard rather than the fridge, always use a dry spoon, and make sure the oil stays covering the pickle. Top up with plain mustard oil if the level drops.
