The recipe the whole business started from. Raw mango cut by hand, dried on the terrace for four days, then packed into cold-pressed mustard oil with a coarse, freshly ground masala.

Bihari mango achar is not the sweet, jammy kind. There is no jaggery and no sugar in the jar — what you get is sour, salty and sharp, with the mustard oil carrying the spice. The pieces keep a firm bite because they were sun-dried rather than boiled soft.

This is the jar most people buy first, and the one that accounts for roughly three-quarters of everything we send out.

What to eat it with

Dal-chawal, paratha, khichdi, or plain curd rice. A spoonful is enough — it is meant to sharpen a meal, not fill it.

Keep the jar in a cool, dark cupboard rather than the fridge, always use a dry spoon, and make sure the oil stays covering the pickle. Top up with plain mustard oil if the level drops.
