Whole small raw mangoes, slit and packed by hand with a bold ground masala, then sun-dried slowly so the spice works its way into the flesh.
Bharwa achar takes far longer than cut pickle. Each mango is stuffed individually and the jar needs weeks before the masala has properly gone in. The result is chunky and intense — you eat one piece, not a spoonful.
What to eat it with
Paratha, poori, or alongside a heavy meal. Cut the piece up and share the masala around the plate.

Keep the jar in a cool, dark cupboard rather than the fridge, always use a dry spoon, and make sure the oil stays covering the pickle. Top up with plain mustard oil if the level drops.
