Whole fat red chillies, deseeded and stuffed by hand with a rich roasted spice blend, then matured in mustard oil.
Bharwa mirch is the hottest thing we make, and the most work — every chilli is slit, cleaned and filled individually. Removing the seeds takes the raw heat down a little, but only a little.
Eat a whole one only if you know what you are doing.

Keep the jar in a cool, dark cupboard rather than the fridge, always use a dry spoon, and make sure the oil stays covering the pickle. Top up with plain mustard oil if the level drops.
